Original Fish and Shellfish
For those who've never cooked with fish or for seafood enthusiasts alike, this course teaches you the techniques you'll need to create impressive fish dishes. Using the freshest fish available, the head chefs will show you how to choose good fish and how to make the very best of it in the kitchen. Dishes may include - prawn and squid caldine, bream baked in a salt crust or lobster with ginger, spring onions and soft egg noodles.
Cooking from Far Eastern Odyssey
Southeast Asian cooking is a glorious assault on the senses and it seems so healthy. This course demonstrates the combinations of hot, sour, salty and sweet, the occasional bitter notes and enthusiasm for colour and texture. Quite simply, it is food of considerable sophistication, delivered in seconds. Dishes may include - fresh spring rolls, clams with beer, black beans and ginger, or Sri Lankan crab omelette with curried coconut gravy.
Desserts with Stuart Pate.
The executive pastry chef, Stuart Pate is one of the best in the country and this course focuses on creating some of Rick Stein’s favourite desserts. From cinnamon churros to the technically challenging toasted almond and lemon meringues, this day will be a treat for anyone with a sweet tooth.
